Black garlic is a processed product from garlic that offers various health benefits and has high commercial value. The process of making black garlic requires precise temperature, humidity, and weight settings to achieve the best quality. However, many farmers still rely on conventional methods in fermentation, which often produce inconsistent and less efficient products. Therefore, it is very important to develop a system that can automatically monitor these parameters. This study aims to design a control system for temperature, humidity, and weight parameters in a black garlic fermentation tool. This black garlic fermentation monitoring system integrates Arduino and ESP32 microcontrollers to collect data from various sensors, including NTC Thermistor (temperature), DHT22 (temperature and humidity), and Load Cell (weight). The test results showed a high level of accuracy, namely 98.8% for temperature, 97.2% for humidity, and 96.06% for weight. With this accurate and real-time monitoring capability, it is hoped that the black garlic production process can be optimized, producing products with more consistent and high quality.
